I look at Kyan's nutrition intake through a weekly span. Whenever I feel like he has not been eating protein as well as he should be, I make this. Handed down to me through my wonderful mother, who cooked for us nearly every single day during my childhood. Xiao Mao Fan, which means Kitty Rice in mandarin, is made up of three simple main ingredients - Salmon, Rice & Seaweed. This recipe is super easy to make and an absolute favorite to whoever I introduce it to. This is my favorite meal to make when I'm feeling lazy but need to make sure Kyan eats well.
Kitty Rice (Xiao Mao Fan)
2 cups Short Grain Brown Rice (Short Grain is best because it is starchier, hence stickier and easier to wrap into seaweed)
4 fillets Wild Caught Salmon
4 packets Seaweed (I buy the big Korean packs from Costco)
a few pinches of sea salt
Optional Mayonnaise, Cucumber, Sesame Seeds
Cook rice in rice cooker. Pan-fry salmon on lightly oiled skillet. Break up cooked salmon into a large bowl. Check for bones. Add in hot cooked rice.
Optional: If using mayonnaise, add now. Mix well. Add cucumber and sprinkle sesame seeds on top before serving.
