It's been a crazy few weeks as we host back-to-back friends coming into town. I think I have not had a free weekend in months. Along with visiting friends comes sumptuous dinners. Since it's St. Patty's Day, in true Irish fashion, we served up Kevin's famous corned beef and cabbage.
We only buy the Brisket Point Cut. There's more marbling and gives better texture. Costco brand. We tried some from Stater Bros this year and they were pretty good too.
Admittedly, as much as we love this tradition, 3 corned beef cabbage dinners within a week was plenty to last for the year. Each time new friends arrive, we made a fresh batch. Naturally there was a ton of leftovers.
We decided to go hike up Mount Baldy Ski Hut on the first weekend we were free, and bring with us our leftovers. When we packed it, I really was not interested in eating any more of it.
But as soon as we got to the Ski Hut, cold corned beef and cabbage was quite divine.
